苋菜肉滑酿凉瓜

配料:凉瓜、猪肉滑、鲮鱼滑、苋菜(剁碎)、盐、料酒、胡椒粉、生抽、糖、生粉、鸡汤、麻油、鸡粉、花生油、蒜茸、蒜片、姜片。

做法:先把凉瓜洗净横切成段,挖掉瓜瓤,备用。将猪肉滑、鲮鱼滑、剁碎的苋菜、适量的盐、胡椒粉、蒜茸捞匀成馅料,备用。用开水将凉瓜煮至半熟,拿出过冷水,沥干水分,在瓜段内壁涂上生粉,“酿”入馅料。烧锅下油,把酿好的凉瓜放入,煎至两面金黄色,放入蒜片、姜片、料酒、鸡汤、生抽、鸡粉、盐、糖、胡椒粉,煮开后用生粉勾芡,加入少许麻油上碟便可。
